It's fairly simple, but very flexible:

1. Draw your inteconnections using the Cable or Dogleg tools
2. Set values for CS_Start_Label and CS_End_Label in your interconnections
3. Select Tools | Reports and choose a Cable Schedule report

This will produce an Excel spreadsheet that contains all of the label data.  You can then format it to print directly, or copy and paste into a label printing program.
