Premise:
When creating symbols, using the [Manufacturer] and [Model Number] are really useful especially when Creating a new UDP from an existing UDP. So many variations of products e.g. signal extenders, video switchers and scalers with slight IO changes benefit from not having to manually edit every field for all symbols in a UDP.  

Can we not also have the [Description] attribute? Moreover, could this attribute be set as default for a new diagram symbol?

Firstly, apologies for the delay in replying to this post.

It's by design that the 'Description' label in a Block Schematic symbol is not linked to the Description attribute of the Product; For library products we want the Description Attribute to be as close as possible a match to the manufacturer's own description of their product, to make it easier to find that product in the Product Browser, Products view etc.  However, the Description might be very long and not suited for the necessarily limited width of the label that's shown within the Block Schematic symbol.

The Description label should therefore be 'shorthand' for the product type, or some other way to identify the symbol on a drawing, which is not necessarily the same as the Description Attribute.

We believe it is best, therefore, to keep the label as something separate and self-contained within the symbol, that can be tailored to suit the dimensions of that symbol, rather than linking it to the Description Attribute which knows nothing about the constraints of the symbol it might be forced to appear in.

I hope this makes sense.
