Ok, I realize it might mean a whole lotta work, but ... it would be useful for me if there was a 'digital audio circuit paths' standard layer, with the relevant symbol connection stubs (i.e. stubs for SP/DIF and AES/EBU etc.) placed in this layer. Any chance?

We will look into it, but you're right, it would be a great deal of work.  For now I recommend that you use one of the User Circuit Path layers for digital audio; this is exactly the sort of thing for which User Circuit Path layers have been included.
